Tacos sudados, also known as “sweaty tacos” or “steamed tacos,” are a Mexican street food specialty. They are typically made by filling soft, warm corn tortillas with various ingredients like meats, beans, or vegetables and then stacking and wrapping them in cloth or plastic kept inside of a wicker basket. This wrapping process allows the tacos to steam and “sweat,” giving them a soft, moist texture.
They are often served with salsas, onions and cilantro. The steaming process helps meld the flavours together, making them especially delicious.

- Prepare the Pork Carnitas as per recipe.
- Clean the chillies. Take away veins and seeds. Roast and soak for 30 minutes in a little bit of the carnita’s broth.
- Place the chillies, broth, onion, garlic, nachos, peanuts, salt and pepper in a blender. Liquidize.
- Fry the salsa and the carnitas in a little bit of oil over low heat until thickened.
- Heat the tortillas on a Comal one by one. Fill with a little bit of the meat, fold in half and place inside a bain-marie dish lined with a cloth.
- You can also place them inside a wicker basket to keep warm.
