Ancho chillies are dried poblano peppers and are usually larger than most other dry chillies. Brownish black and wrinkled appearance with a wonderful fruity aroma, like black cherries or figs.
Anchos can be re-hydrated and stuffed. They are great to use sliced or chopped in soups, salsas, stir fries and similar dishes.
Traditional recipes such as mole sauces often use Ancho chillies.
Best if kept in the freezer in a sealed container and lightly roasted in a pan before use.
