Cochinita Pibil is a slow-roasted meat dish from the Yucatán region of Mexico.
Traditionally, Cochinita Pibil is prepared by marinating pork in an acidic annato-based marinade and slow-roasting it, wrapped in banana leaves, over a flame. The annato seed adds a pleasant earthy flavour to the meat while giving the dish a deep orange colour.
Saving you the hours it takes to make Cochinita Pibil from scratch, this pork version is quick and easy to prepare. Simply open the pouch, microwave for 45 seconds or heat in a pan and enjoy!
Cochinita Pibil is particularly tasty in tacos and burritos with pickled red onions and salsa.
Store in sealed can in a cool, dry place.
Once opened, transfer to a re-sealable container and store in the refrigerator.
Use within a week of opening.
