Jamaica is a standard item in any Mexican kitchen. The dried petals of crimson hibiscus flowers – jamaica is a mainstay as a tea or the base of an agua fresca.
Aguas frescas are cool water-based juices that are served at the table with any meal. Always refreshing, they are a great addition to any meal. The agua fresca made with jamaica flowers – also known as agua de Flor de Jamaica – is deep red and has a tart flavour similar to that of red berries.
Another delicious use for the flowers, once you have brewed your tea with them, is to fry them up with a bit of onion, garlic and a pinch of epazote or chipotle for a tangy quesadilla filling.
Keep properly sealed inside a closed container in a dry, cool place.
