A Torta Ahogada is a traditional Mexican sandwich from the city of Guadalajara, Jalisco.
It consists of a bolillo (a type of crusty white bread like a Portuguese roll) filled with pork, refried beans and sometimes avocado or cheese. The roll is ‘drowned’ in a spicy tomato salsa, making it a flavourful and quite messy dish; but worth the mess!!!

- Heat the Enchilada Sauce in a deep casserole.
- In a separate pan, heat the Pork Carnitas
- Cut each roll in half and smear on top and bottom with the refried beans. Add the carnitas, avo and cheese.
- Place reach roll on a soup bowl and drizzle with a good quantity of salsa.
- Garnish with the pickled onion.
