- Season the pork loin with salt and pepper. Seal in a large skillet on all sides.
- In a blender, liquidise the chipotles, mango and balsamic vinegar. Place in a plastic bag, add the meat and marinate for at least 2 hours in the fridge.
- Take the meat out of the bag and place on a baking sheet lined with wax paper.
- Bake at 180* for 35 minutes.
- In the mean time, boil the potatoes and Brussel sprouts until tender. Drain and fry in butter. Add salt and pepper to taste.
- Slice the meat, drizzle with the remaining sauce and serve with the veggies.
