A delicious take on the traditional consommé that blends the deep, rich flavours of a meat broth with the comforting texture of Mexican-style dumplings.

- In a deep pot, brown the onion and mince.
- Add water and seasoning cube. Bring to a boil.
- On a separate bowl, mix the Masa Harina with 1 cup of water and the pinch of salt. Knead with your hands until you get a smooth dough.
- Make 2 cm diameter balls with the masa and make a small dip in the middle of each dough ball. Add to the boiling soup. Once cooked, the consommé will be ready to serve.
- Drizzle a few drops of lime juice and the salsa of your choice. Garnish with fresh coriander leaves.
