Tamarind sorbet is a refreshing frozen treat made from the pulp of tamarind fruit, which has a distinctively tangy, sweet and slightly sour flavour. The sorbet’s smooth, icy texture complements the bold, tangy taste of the tamarind, making it a zesty and invigorating dessert.
When paired with Tajin, a popular Mexican seasoning blend of chili powder, lime and salt, the sorbet takes on an extra layer of complexity. The spice from the chili, the citrusy brightness of lime and the saltiness of Tajín enhance the sorbet’s natural tanginess, creating a vibrant balance between sweet, sour and spicy flavours. This combination is a favourite for those who love bold, contrasting tastes. In this recipe we will be using Palebola lollypops for the tamarind ingredient.
