Red Achiote Seasoning Paste:

This paste is made from slightly bitter, earthy-flavoured red Annatto seeds mixed with a variety of spices and ground into a paste. Achiote gives a distinctive brilliant red-orange colour to dishes. It is the main ingredient of the well-known Yucatan slow-roasted pork dish: Cochinita Pibil. The slow roasted pork can also be pulled for a delicious taco filling.
The paste is best dissolved in orange juice, water and vinegar to create a marinade for chicken, pork or fish.
Refrigerate after opening in a closed container and used within 8 weeks.
