In its fresh form, a Guajillo chilli is called a Mirasol chilli pepper.
A moderately hot chilli, the Guajillo has a mild, slightly sweet and bitter flavour – reminiscent of tart fruits, pine and tea. There is also a light smokey note due to the drying process.
Guajillo chillies deliver a very mild heat and it’s unique flavour pairs well with citrus and honey.
Guajillo chillies are used in many classic salsas, moles, soups and stews. They have a tough, reddish brown skin so pre-soaking is recommended before use.
Best if kept in the freezer in a sealed container and lightly roasted in a pan before use.
