Molcajete:
A molcajete is a traditional Mexican pestle and mortar individually, hand-carved out of a single block of basalt rock. Used since thousands of years ago by the Mayans and Aztecs to grind spices and crush chillies to prepare salsas and guacamole.
A new Molcajete must be ‘cured’ before using by grinding uncooked white rice – a handful at a time until no visible grains of basalt come loose during the grinding.
