Gluten Free Lemon Bread

  • 1 3/4 Cups Masa Harina +
  • 1 1/4 Cups Lukewarm water
  • 180 gr Butter
  • 1/2 TBSP Fresh lemon juice
  • 1 TBSP Salt
  • 4 Eggs
  • 3 1/2 TBSP Baking powder
  • 3 TBS Corn starch

This gluten-free lemon bread is a delightful balance of citrusy brightness and soft, moist texture. Made with fresh lemon juice and Masa Harina, it’s naturally gluten-free while still fluffy and flavourful. Perfect for breakfast, an afternoon treat or a light dessert, this loaf is sure to bring a burst of sunshine to your day. Enjoy it plain, with a drizzle of glaze or alongside your favourite tea or coffee!

DIRECTIONS:

  1. In a large bowl, mix the Masa Harina with the water until a soft consistency is achieved.
  2. In a separate bowl, beat the butter and lemon juice until creamy. Add the sugar, salt, eggs – one by one -; keep beating to incorporate to the dough. Add baking powder and corn starch. Beat until all ingredients are mixed.
  3. Pour the mixture into a previously greased and flour coated baking dish.
  4. Bake at 250 * for 30 minutes.
  5. Let cool and enjoy.
