What a better way to start your weekend than with a classical Mexican breakfast? Huevos Rancheros are fried eggs served on hot corn tortillas, smothered with refried beans and topped with Mexican salsa.

INGREDIENTS:
DIRECTIONS:
1.Heat oil in a non-stick frying pan.
2.Quickly fry each corn tortilla and set on a plate. (2 per plate)
3.Smother each tortilla with a spoon-full of refried black beans.
4.Fry the eggs and layer on top of the tortillas and black beans.
5.Heat your salsa and serve on top of the eggs.
