1 Knorr Mi Arroz Rojo – Mexican Red Rice Seasoning (17grs/sachet)
1 1/2 cups rice
3 1/2 cups hot water
1 spring fresh coriander
1 cup diced frozen vegetable mix
- In a large pot, heat the oil and fry the rice stirring constantly until it changes to an off white colour. Be very careful not to burn it.
- Add the hot water. Carefully.
- Add the seasoning and vegetables. Stir and finally add the coriander.
- Cover and cook over very low heat for 20 minutes.
